Will salute me! Yes, if you are running out of time before the holidays and if you are not really the Martha Stewart of the Christmas Cookie but want to serve up some homemade cookies, I’ve got the cookie recipe for you. This is so easy that your kids can help without making the kitchen look like an explosion at a flour factory.
I do bake and have made many hundreds of dozens of Martha-esque Christmas goodies but I still make these. My mom showed me how to do these when I was in grade school. The recipe is even in the old and worn church recipe book from ST. Scholastica church. Has my mom’s name in the credits.
1 cup soft shortening
1/3 cup milk
1 cup nuts-optional
I box cake mix
Tiny bit of flour
Mix shortening and nuts
Add egg- milk and cake mix and enough flour to make a, stiff dough
Drop by teaspoonful 1 inch apart on greased cookie sheet
Bake in preheated 350 degree oven for 11 to 14 minutes
Remove to cooling rack
Now, I like this recipe because you can use any flavor cake mix and can add just about anything you choose to the dough. I’ve made some odd combos over the years but with all of the different chocolate flavored morsels or dried fruit or various types of nuts available I’ll bet anyone can get creative.
Just think. You can surprise family and friends with a small effort and little mess. That’s a win/win in my book.
Plus, this recipe is great when the urge for a homemade cookie strikes any time of the year. Boxed cake mix keeps in the pantry and so does Crisco.
